What to expect
Four classic beef burgers take about 25 minutes. Keep the patties loosely formed, toast the buns until golden and use a thermometer—not color—to confirm 71.1°C / 160°F in the center of the ground-beef patties.
- Divide 600 g beef into four patties of about 150 g each.
- Keep the patties about 2 cm thick and avoid compressing them hard.
- Toast the cut sides of the buns until evenly golden.

Method
Prepare the patties
Gently shape the ground beef into four even patties, about 2 cm (¾ inch) thick. Avoid pressing too hard to keep them light and juicy. Sprinkle salt, black pepper, garlic powder, and onion powder on both sides. Drizzle Worcestershire sauce over the patties just before cooking.

Toast the buns
Cut the buns in half and spread a thin layer of butter on the cut sides. Toast them on a hot skillet or grill for about 1–2 minutes until golden brown and slightly crispy. Set aside.

Cook the patties
Heat a grill or skillet over medium-high heat. Place the patties on the hot surface and cook until a deep brown crust forms, then flip once. Continue cooking until the center of each patty reaches 71.1°C / 160°F on an instant-read food thermometer. During the final minute, place one slice of cheddar on each patty and cover briefly so the cheese melts. Insert the thermometer probe from the side into the center of each patty and wait for a stable reading.

Assemble the burger
Spread mayonnaise on the bottom half of each bun. Place a lettuce leaf, followed by a cooked beef patty with melted cheese. Add tomato slices, red onion, and pickles. Spread ketchup and mustard on the top half of the bun and close the burger.
Serve
Serve the burgers immediately while the cheese is melted and the toasted buns are still crisp.
The details that protect the result
Critical control points
Prepare the patties
Four even patties, each about 2 cm thick, with the meat held together but not tightly compressed.
Pressing and compacting the beef too firmly while shaping.
Toast the buns
The cut sides of the buns are evenly golden brown with a lightly crisp surface, not dark or burnt.
Cook the patties
71.1°C / 160°F
Check the center of each ground-beef patty with a food thermometer; do not rely on color alone.
Technique explained
Why this recipe works
Thermometer-based doneness
Ground beef is cooked to 71.1°C / 160°F and checked with a food thermometer rather than judged by color, matching USDA FSIS safety guidance.
When something goes wrong
Troubleshooting
The patty is browned outside but the center is below 71.1°C / 160°F.
Check:Insert a food thermometer into the center of the patty.
Fix:Continue cooking and recheck until the center reaches 71.1°C / 160°F.

More tips & details
Choosing the beef
The 80/20 label describes lean beef and fat, not a beef-and-pork blend. For this formula, look for ground beef with about 20% fat; check the pack rather than assuming every ground-beef product has the same composition.
Before heating the pan
Slice the tomato, red onion and pickles, then set out the lettuce and sauces. Use separate utensils for raw beef and ready-to-eat toppings, and a clean plate for the cooked patties.
Understanding the temperature target
The source target follows USDA FSIS guidance for ground meat. A thermometer showing only whole Celsius degrees should be set to 72°C rather than rounded down. The browned surface cannot establish that the center has reached a safe temperature.
What has been verified
The food-safety guidance was checked against published sources; Recivelle has not documented a physical test of this exact batch. The 25-minute total is a planning estimate, so allow more time if the patties need further cooking. Nutrition values, storage and substitutions have not been verified for this formula.
